CARROT CAKE



Source from Joy Of Cooking which became recommended carrot cake @Wu Lan's Kitchen..

ingredients :

4 medium eggs
200 gr castor sugar
150 gr brown sugar
250 gr flour
1/2 tsp salt
1/2 tsp emulsifier
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon powder
450 gr grated carrot
250 gr butter melted, or substitute with 240 ml cooking oil
150 gr cashew nut/walnut chopped

Direction :

1. grease pan 22 cm with margarine and cover with baking paper on the bottom
2. Mixed eggs, sugar, salt, emulsifier until soft peak
3. Put in the flour gradually until mixed well
4. put in grated carrot, melted butter and cashew nut into the batter mixed well
5. pour the batter into the mold, bake for 45 menit, 170'c until cooked well.


Cream Cheese for filling and topping


57 gr butter
227 gr cream cheese
230 gr shifted icing sugar
1 tsp vanilla flavour
1 tbsp lemon zest

how to :
  • beat the cream cheese and butter on low speed blend with no lumps
  • gradually add in icing sugar until smooth
  • beat in vanilla flavor and lemon zest
  • ready to use as filling or topping
